Strawberry & Feta Bulgur Salad

Bulgur salad with strawberries and feta cheese.


  1. 1 cup 100% quick cooking bulgur wheat
  2. 2 cups cold water
  3. 3 Tbsp. extra virgin olive oil
  4. 3 Tbsp. lemon juice
  5. ½ tsp. salt
  6. ¼ tsp. ground black pepper
  7. 4 oz. crumbled garlic & herb feta cheese
  8. 1½ cups sliced fresh strawberries
  9. 3 green onions sliced
  10. ½ cup walnut halves
  11. ½ cup chopped fresh parsley


  1. In a medium saucepan, cover bulgur with water, cover with lid and bring to a boil over medium heat. Reduce heat to medium low and simmer 12-15 minutes until tender. Drain, rinse with cool water pressing out all excess liquid. In a small bowl, whisk together olive oil, lemon juice, salt and black pepper. Toss all ingredients with dressing in a serving bowl.
