Southwestern Wheat Salad

Introduction

Southwestern mango bulgur salad.

Ingredients

  1. 2 cups 100% quick cooking bulgur wheat
  2. 2 cups water
  3. ⅓ cup fresh cilantro leaves
  4. 3 green onions sliced
  5. 1 mango peeled seeded and diced
  6. 1 jalapeno stemmed seeded and finely diced
  7. 1 cup mini sweet cherry tomatoes
  8. 1 cup cucumber peeled and diced
  9. ⅓ cup orange bell pepper finely diced
  10. ¼ cup orange mango juice
  11. 2 Tbsp. lime juice
  12. ¼ cup extra virgin olive oil
  13. ½ tsp. Southwest chipotle seasoning blend
  14. ¼ tsp. ground black pepper

Steps

  1. In a medium saucepan, cover bulgur with water, place on lid and bring to a boil over medium heat. Reduce heat to medium low and simmer 12-15 minutes until tender. Drain, rinse with cool water, press all excess liquid out of bulgur. In a small mixing bowl, whisk together orange mango juice, lime juice, olive oil, chipotle seasoning and pepper. Toss all ingredients with dressing in a serving bowl.
