Southwestern Wheat Salad

Introduction
Southwestern mango bulgur salad.
Ingredients
- 2 cups 100% quick cooking bulgur wheat
- 2 cups water
- ⅓ cup fresh cilantro leaves
- 3 green onions sliced
- 1 mango peeled seeded and diced
- 1 jalapeno stemmed seeded and finely diced
- 1 cup mini sweet cherry tomatoes
- 1 cup cucumber peeled and diced
- ⅓ cup orange bell pepper finely diced
- ¼ cup orange mango juice
- 2 Tbsp. lime juice
- ¼ cup extra virgin olive oil
- ½ tsp. Southwest chipotle seasoning blend
- ¼ tsp. ground black pepper
Steps
- In a medium saucepan, cover bulgur with water, place on lid and bring to a boil over medium heat. Reduce heat to medium low and simmer 12-15 minutes until tender. Drain, rinse with cool water, press all excess liquid out of bulgur. In a small mixing bowl, whisk together orange mango juice, lime juice, olive oil, chipotle seasoning and pepper. Toss all ingredients with dressing in a serving bowl.
