Ingredients

  1. 1½ cups cooked barley
  2. 15 oz.can black beans,drained
  3. 1 each red and green pepper,diced
  4. ⅓ cup olive oil
  5. 1 T.lime juice
  6. ¾ cup chunky salsa
  7. ¼ cup chopped fresh cilantro

Steps

  1. Combine barley,beans and pepper in large bowl.Combine olive oil,lime juice,salsa and cilantro in separate bowl.Pour over barley mixture.Serve room temperature.
