Ingredients
- 1½ cups cooked barley
- 15 oz.can black beans,drained
- 1 each red and green pepper,diced
- ⅓ cup olive oil
- 1 T.lime juice
- ¾ cup chunky salsa
- ¼ cup chopped fresh cilantro
Steps
- Combine barley,beans and pepper in large bowl.Combine olive oil,lime juice,salsa and cilantro in separate bowl.Pour over barley mixture.Serve room temperature.
