FYI---Orange RSS BUTTON on the LEFT-HAND side for notification of new post. Pretty cool, eh? Continuing on with "feel good" food, here's one of my fav's which was given to me by my sweet friend Liz. There's Liz's way, then there's how "I doos it," as my grandbeauty says. Onion Roasted Potatoes 1 envelope Campbell or Lipton dry Onion Soup Mix 2 pounds all-purpose potatoes, cut into large chunks (I used "new potatoes") 1/3 cup of oil Preheat your oven to 450 degrees. In a large plastic bag, add all of the ingredients. Close it...(this means that somebody, somewhere, didn't) and shake the bag until the potatoes are evenly coated. Empty them onto a shallow baking/roasting pan. Throw bag away (this means somebody, somewhere, kept it). Bake, stirring occasionally, for about 40-minutes or until potatoes are tender. Garnish with chopped parsley, if you wanna. Makes about 8 servings, unless of course you are so hungry you could eat a possum, dead or alive, then you'll only have 5 servings. Me? I slap the chunks of potatoes onto a roasting pan after heating up the old oven. I poured EVOO over potatoes, sprinkled the dry stuff over them, and slap them in the oven. There is a whole lotta slappin' going on when I cook. Goes with just about anything. Bake some chicken or that other white meat, add a pineapple salad with fat-free mayo and fat-free cheese on it, and you're the hero at the dinner table sans the 3 helpings you ate in the broom closet. Tsk...tsk...tsk.
