smoked chile peppers and black beans

Introduction

I had not much in the house, and here's what I made ... surprisingly good

Ingredients

  1. Some black beans - I had already soaked and cooked them in a pressure cooker with some salt.
  2. Some olive oil
  3. A few cloves of garlic
  4. 4 to 5 dried whole red chile peppers
  5. 1 large can of stewed tomatoes, or some fresh tomatoes cooked down
  6. fresh ground pepper
  7. salt
  8. skim milk (optional)
  9. dollop of sour cream or something similar (optional)
  10. Some tortilla chips

Steps

  1. Pour the can of tomatoes into the beans, as if you were making black bean chile
  2. Pour a small amount of olive oil into a frying pan and heat it up slowly
  3. Take some of the seeds out of the dried chiles and break them up; then add them to frying pan
  4. Cook the chiles until they begin to brown and get smokey
  5. Add the garlic at the end and let it simmer as the chiles cool down
  6. Add the chiles/garlic to the beans and tomatoes
  7. After you cook it for a while, blend everything together with a hand blender
  8. Add some skim milk to make it a bit creamy
  9. Salt and pepper to taste
  10. Garnish with cream/tortilla chips
