smoked chile peppers and black beans
(recipe, Tom Cobb)
Introduction
I had not much in the house, and here's what I made ... surprisingly good
Ingredients
- Some black beans - I had already soaked and cooked them in a pressure cooker with some salt.
- Some olive oil
- A few cloves of garlic
- 4 to 5 dried whole red chile peppers
- 1 large can of stewed tomatoes, or some fresh tomatoes cooked down
- fresh ground pepper
- salt
- skim milk (optional)
- dollop of sour cream or something similar (optional)
- Some tortilla chips
Steps
- Pour the can of tomatoes into the beans, as if you were making black bean chile
- Pour a small amount of olive oil into a frying pan and heat it up slowly
- Take some of the seeds out of the dried chiles and break them up; then add them to frying pan
- Cook the chiles until they begin to brown and get smokey
- Add the garlic at the end and let it simmer as the chiles cool down
- Add the chiles/garlic to the beans and tomatoes
- After you cook it for a while, blend everything together with a hand blender
- Add some skim milk to make it a bit creamy
- Salt and pepper to taste
- Garnish with cream/tortilla chips
