Marionberry Pie

4th Place Marionberry Pie contest—Oregon State Fair 2009 Recipe by: Katie Buerk

Ingredients

    Crust
    1. 2½ cups of flour
    2. 2 sticks of butter
    3. 1 -teaspoon salt
    4. ½ cup of sugar
    5. 6 to 8 Tbsp. of ice water
    Filling
    1. 4 cups Marionberries
    2. 3 Tbsp. of flour
    3. 2 Tbsp. of lemon juice
    4. ½ tsp. of salt
    5. ½ cup sugar

    Steps

      Crust
      1. Dice butter into ½ inch cubes. Freeze for 15minutes. Mix flour, salt, and sugar, in a food processor. Pulse in butter and ice water until dough can be pinched together. Knead into 2 discs and refrigerate overnight.
      Filling
      1. Mix all ingredients and pour into rolled out piecrust.
      2. Bake at 450 degrees for 10minutes then 350 degrees for 30minutes.
