PBJ cookies

Ingredients

  1. 1 lb. butter
  2. 2 cups sugar
  3. 1½ cups peanut butter
  4. 2 eggs
  5. 6 cups all purpose flour
  6. ½ t salt
  7. 2 t baking powder
  8. 2 t vanilla
  9. 2 Tbsp. milk as needed
  10. Jelly for filling

Steps

  1. Cream butter, sugar and peanut butter
  2. Add eggs
  3. Combine dry ingredients
  4. Add dry to creamed mixture
  5. Add vanilla
  6. Add enough milk to soften enough to handle
  7. Form dough into 1½" diameter log. Refrigerate a minimum of two hours
  8. PReheat oven to 400 F. Cut dought into ⅛" slices and arrange on cookie sheet. Bake 6-10 minutes. Cool then fill with jelly
