I'm used to making large meals, and taking leftovers to work or freezing them, but it's hard just to store ingredients, let alone bulk leftovers, in my tiny little section.  How do I cope with this? (though i'm sure it's harder than it sounds).  Lately I've been making quick small batches of fried rice in the morning to slip into a container for lunch.  Leftover rice, whatever veggies are in the fridge, an egg, lots of pepper, a spot of siracha and ready to go.  Takes less than 10 min, including chopping. </td></tr></table></div>

She's got some bang-up tips for sharing the load of making kids' lunches:<br /><br />  --Pick two friends, a kitchen and a date.<br />  <br />--Make a list of lunch items for the week (make sure they are freezer friendly, or foods that can keep a few days in the fridge).-<br />  <br />-Make each person responsible for the ingredients for one recipe (keep receipts and even out the costs at the end of the cooking date).<br />  <br />--Get together for a couple hours, prep, cook and store for the week.<br />  <br />--Some of our lunchbox favorites include fruit salad, cut up veggies, pasta salad, homemade applesauce, healthy muffins and granola bars, hummus with homemade chips, empanadas, burritos, chocolate chip cookies and chicken tenders.<br />  <br />--Enjoy pulling out these great items day after day (pack the box or bag the night before to avoid totally stressful mornings). </td></tr></table></div>

If I think about dinner for 5 minutes in the morning, it makes life so much easier and always (okay, usually) results in a tasty meal for dinner, plus lunch the next day. Turn a bunch of broccoli into roasted broccoli, a bunch of veg and meat into stew.  Alternatively, buy the ingredients the day you're cooking. I think where I've seen it work well there are maybe only two part-time gardeners, but there's a coordinated effort to work the garden into math instruction, science, art — reading even.
