Grilled Salmon and Baby Bok Choy

Introduction

Very moist salmon recipe, good for company. From Bon Appetit, not sure of date

Ingredients

  1. 2 lb. wild salmon filet - about two filets
  2. 1 Tbsp. sesame oil
  3. 2 large garlic cloves, minced
  4. 1 Tbsp. fresh ginger, minced or grated
  5. 6 to 8 baby bok choy, cleaned well and cut in half lengthwise
  6. 3 Tbsp. rice wine or sake
  7. 3 Tbsp. soy sauce
  8. Lime

Steps

  1. Place salmon filet on a large piece of heavy duty aluminum foil - big enough to wrap and seal
  2. Rub salmon with sesame oil
  3. Season with salt, peppper, garlic and ginger
  4. Arrange bok choy on top
  5. Drizzle with rice wine and soy sauce
  6. Seal foil
  7. Grill on medium-high heat for 25 minutes
  8. Let stand for 10-30 minutes before serving, still sealed
  9. Transfer to platter to serve, squeeze lime juice over and serve with extra lime wedges
