Baked Orzo

Introduction

Similar to spinach and rice. Good side with beef or lamb, vegetarian.

Ingredients

  1. ½ lb. orzo
  2. 1 large red peppper
  3. 2 medium zuchinni
  4. 1 14.0 oz. can roasted diced tomatoes
  5. ¼ cup red wine, preferable Shao Xin rice wine
  6. 3 cloves garlic
  7. ½ onion, diced
  8. 2 oz. parmesan cheese
  9. salt, pepper, oregano and basil to taste
  10. olive oil

Steps

  1. Boil orzo for 8 minutes or until al dente, drain
  2. Saute zuchinni in olive oil
  3. Saute garlic and onion til soft, then add tomatoes and wine. Cook until liquid is reduced. Add seasonings
  4. Combine all ingredients and put into 2 qt baking dish
  5. Bake @ 350F for 30-40 minutes
