Baked Orzo

Introduction
Similar to spinach and rice. Good side with beef or lamb, vegetarian.
Ingredients
- ½ lb. orzo
- 1 large red peppper
- 2 medium zuchinni
- 1 14.0 oz. can roasted diced tomatoes
- ¼ cup red wine, preferable Shao Xin rice wine
- 3 cloves garlic
- ½ onion, diced
- 2 oz. parmesan cheese
- salt, pepper, oregano and basil to taste
- olive oil
Steps
- Boil orzo for 8 minutes or until al dente, drain
- Saute zuchinni in olive oil
- Saute garlic and onion til soft, then add tomatoes and wine. Cook until liquid is reduced. Add seasonings
- Combine all ingredients and put into 2 qt baking dish
- Bake @ 350F for 30-40 minutes
