We belong to a local CSA where we get a vegetable share, fruit share, and cheese share for $155/mo.   Add to that the meat CSA we are about to join where we will get 20# of meat per month for $100/month.   Then we'll just have to add a bit for grains/dairy at the co-op.   Seriously, I used to spend $500/month on our family's groceries.   If I SERIOUSLY clipped coupons I could cut it to $300-400.   Now I get that automatically without half the work.   And I don't even have to spend my time going on 45 minute shopping trips with my reluctant 4 year old in tow, or monotonously cutting and filing coupons. Big box stores like Costco make me dizzy, and I do not think you save as much as you are led to believe.<br />  <br />I told him about the Meatless Mondays, and he agrees going meatless one or two days a week is great for our health and our budget.   I am also going to try planning menus for a week before I do our weekly shop. </td></tr></table></div>

Quinoa seems to fill us better than rice and it's so variable.  This week we made one with feta, olives, lemon, mint, cucumbers and tomatoes.  Had it warm with first night with lamb kebobs.  Second night, I put it cold on salad greens and that was the whole dinner (my guy had leftover lamb, too).  Last night put it on salad greens again, slightly warmed, and topped with a fried egg.  All this from 1.25 cups of quinoa.  It was frugal because it went a long way, but the ingredients were kind of pricey.  I've noticed that I'm paying a lot more lately for my regular staples. </td></tr></table></div>

I was surprised the taste is just as good with boiling, house stays cool and uses way less energy.  Boiling only takes 20 minutes for small beets.  Only one burner going. I improvised one with an iron dutch oven and glass lid set in a wheel-barrow and aluminum foil reflectors over cardboard.  I roasted beets that way and they turned out great!  EDITOR'S NOTE: update from Linear Girl "I think I must have had a brain freeze when I mentioned cooking beets in the solar oven; beets are the one thing I tried that did NOT work well in my improvised oven. Other foods worked well, especially more liquid recipes." </td></tr></table></div>
