Ingredients

  1. 32 eggs 128
  2. 1½ cups olive oil 6c
  3. 6 Tbsp. salt 1.5 c
  4. 13 cups AP flour 3.25 gallon
  5. 6 cups semolina 1.5 gallon

Steps

  1. Crack eggs in a bowl and blend with immersion blender
  2. Put flour, semolina, salt in mixer, mix with dough hook
  3. Add eggs and oil
  4. Knead with hook till hook comes clean and dough does not stick to side of bowl.
  5. Divide into logs and clingfilm for freezer
