Ingredients
- 32 eggs 128
- 1½ cups olive oil 6c
- 6 Tbsp. salt 1.5 c
- 13 cups AP flour 3.25 gallon
- 6 cups semolina 1.5 gallon
Steps
- Crack eggs in a bowl and blend with immersion blender
- Put flour, semolina, salt in mixer, mix with dough hook
- Add eggs and oil
- Knead with hook till hook comes clean and dough does not stick to side of bowl.
- Divide into logs and clingfilm for freezer
