Homemade Oreos

Introduction

I found this recipe from http://smittenkitchen.com and adapted it. I have a fructose intolerance so I adjusted the sugar content to include dextrose and I used smart balance 50/50 sticks instead of butter or shortening.

Ingredients

  1. Chocolate Cookie:
  2. 1¼ cups flour
  3. ½ cup cocoa (I used Hershey's)
  4. 1 tsp. baking soda
  5. ¼ tsp. baking powder
  6. ¼ tsp. salt
  7. ⅓ cup dextrose
  8. ⅔ cup sugar
  9. 10 Tbsp. 1 smart balance buttery sticks
  10. 1 large egg
  11. Filling:
  12. 16 Tbsp. 1 smart balance buttery sticks
  13. 2 cups powdered sugar
  14. 2 tsp. vanilla

Steps

  1. Chocolate Cookie:
  2. 1. Preheat oven to 375
  3. 2. Mix flour, cocoa, baking soda, baking powder, salt, dextrose and sugar.
  4. 3. Add butter and mix until granulated.
  5. 4. Add egg and mix until it dough barely comes together. It will be the consistency of packed sand.
  6. 5. Roll into small balls (about 1 tsp worth) and place 2 in apart on baking stone. Flatten the balls.
  7. 6. Cook 9-10 min and cool.
  8. Filling:
  9. 1. Beat butter, sugar and vanilla several minutes until creamy.
  10. 2. Cover a cookie with the filling and place another cookie on top. I used a knife for this.
  11. *Since I used all butter for the filling it tastes more like frosting than the traditional filling.
