Homemade Oreos

Introduction
I found this recipe from http://smittenkitchen.com and adapted it. I have a fructose intolerance so I adjusted the sugar content to include dextrose and I used smart balance 50/50 sticks instead of butter or shortening.
Ingredients
- Chocolate Cookie:
- 1¼ cups flour
- ½ cup cocoa (I used Hershey's)
- 1 tsp. baking soda
- ¼ tsp. baking powder
- ¼ tsp. salt
- ⅓ cup dextrose
- ⅔ cup sugar
- 10 Tbsp. 1 smart balance buttery sticks
- 1 large egg
- Filling:
- 16 Tbsp. 1 smart balance buttery sticks
- 2 cups powdered sugar
- 2 tsp. vanilla
Steps
- Chocolate Cookie:
- 1. Preheat oven to 375
- 2. Mix flour, cocoa, baking soda, baking powder, salt, dextrose and sugar.
- 3. Add butter and mix until granulated.
- 4. Add egg and mix until it dough barely comes together. It will be the consistency of packed sand.
- 5. Roll into small balls (about 1 tsp worth) and place 2 in apart on baking stone. Flatten the balls.
- 6. Cook 9-10 min and cool.
- Filling:
- 1. Beat butter, sugar and vanilla several minutes until creamy.
- 2. Cover a cookie with the filling and place another cookie on top. I used a knife for this.
- *Since I used all butter for the filling it tastes more like frosting than the traditional filling.
