Spring Spinach Salad with Pastured Pork Bacon & Strawberries

This hearty salad can easily double as an entire meal.


  1. 1 bag fresh spinach
  2. ½ lb. bacon
  3. 1 cup sliced strawberries
  4. ½ cup spring onions
  5. ¼ lb. fresh mushrooms
  6. 4 oz. feta cheese
  7. 4 Tbsp. Olive oil
  8. 1 Tbsp. Balsamic vinegar
  9. Freshly ground black pepper


  1. Wash and dry the spinach.
  2. Cook bacon until crispy and remove from pan to cool. Crumble into smaller bites.
  3. Using the bacon grease, cook sliced mushrooms.
  4. Slice white and green parts of spring onions.
  5. Add cooked bacon & mushrooms, onions, strawberries and crumbled feta cheese.
  6. Toss with olive oil until lightly coated. Add Balsamic vinegar and pepper. Toss again and serve.
