7-Cup Potatoe Salad

Ingredients
- 1 cup cubed cooked potatoes ,(about 1 8 ounce potato , peeled, cut into small cubes and cooked)
- 1 cup cubed cooked ham
- 1 cup diced hard-cooked egg (about 3 large eggs)
- 1 cup cubed apple (about 1 medium-sized apple)
- 1 cup cubed peeled cucumber (about 1 large cumcumber)
- 1 cup diced onion (1 medium-sized onion)
- 1 cup mayonnaise-type salad dressing (such as Miracle Whip)
- ΒΌ tsp. each, salt, and black pepper-Parsley for garnish optional
Steps
- 1.In a large bowl mix together the potatoes, ham, egg, apple, cucumber, onion,salad dressing,salt and pepper.
- 2. Refrigerate, covered, for at least 2 hours. Garnish with parsley if desired
