Ingredients

  1. ¼ cup long-grain white rice
  2. ½ Tbsp. butter or to taste
  3. ⅝ garlic cloves, crushed or small dab of garlic spread to taste
  4. ½ cup chicken broth, divided
  5. ⅛ tsp. salt
  6. ⅛ tsp. black pepper
  7. optional
  8. thinly sliced green onions
  9. chopped toasted macadamia nuts
  10. extra-virgin olive oil
  11. ½ scallions (spring onions), green and white parts, chopped
  12. ½ cup water
  13. ¼ lb. fresh spinach, trimmed, thoroughly washed, and chopped
  14. lemon juice
  15. chopped parsley

  17. Salt and freshly ground pepper to taste

Steps

  1. Preheat oven to 375*.
  2. Add broth to rice and cook.
  3. Add garlic, butter, salt, pepper to taste.
