Buñuelos

What to do with that last bit of shredded cheese?

Are you craving bread too?

Combine the two together and make buñuelos, little latin cheese breads. They're very eggy, just cheezy enough to satisfy a cheese craving, and so much fun to make.

Now, I don't bake. It's really not my thing. I don't like to measure, I'm not really good at it, and I really prefer just cooking. This is one of the few things I bake because I like to stir. (That was my favorite part win helping my mom in the kitchen when I was little. I loved to stir. Cookie dough, sauce, anything. I always asked to stir whatever she was making. Shoutout to mama: Hi, Ma!)

1. Take 1/4 cup of butter and put in in a pan with 1 cup water. Boil this.

2. Once boiled, take 1 cup of flour, dump it in the pot and ... stir, stir, STIR! Work fast. Soon, you'll see it all come into one clump. Perfect. You're half-way done.

3. Add two eggs and 1 yolk to this with 1/2 cup of shredded cheese. Add salt, a quick squeeze of spicy mustard.

4. Spoon into balls on a cookie sheet and bake at 400. After 15 minutes, lower the heat to 375.

5. Cool and EAT. Try to save some for co-workers in the morning. It's tough, but you can do it.
