Millie's Pecan Pie

(recipe, Deanna Dudney)

Millie Lomont was a fantastic baker, her pies were known county wide, and at bake sales people always asked: "Which pie is Millie's?"

  1. 1 heaping cups broken pecans
  2. 9 " pastry shell, unbaked
  3. 2 eggs, slightly beaten
  4. 1 cup light corn syrup
  5. ¼ cup sugar
  6. 2 Tbsp. flour
  7. ⅓ tsp. salt
  8. 1 tsp. vanilla

  1. Spread pecans in the unbaked pie shell. Mix remaining ingredients and pour over pecans. Bake at 375 for 40-50 minutes or until filling is set. Note: Cover pie shell edges halfway through baking time to prevent over-baking.
