Leonie's Lemony Lentils
(recipe, sujata soni wipper)
Ingredients
- 1½ cps of lentils (I use french lentils - the dark green ones as they don't get all mushy)
- 8 cps veg stock
- 1 med onion (chopped)
- 3 minced cloves of garlic
- 1 large potato
- 2 bunches swiss chard
- olive oil
- ½ cp fresh cilantro
- salt + pepper
- ½ tsp. (at least) cumin
- 3 TBS lemon juice
- & lemon slices
Steps
- lentils in veg stock, cover, simmer.
- add cubed potato, cover, simmer 20 min
- add sliced chard
- approx additional 20 min of simmer should make lentils tender
- cook onion til golden brown
- add garlic + cilantro at end
- add onion mix to soup for last 5 min of cooking
- stir in salt, pepper, cumin + lemon juice to taste
