Mache Salad

(recipe, Hillsdale Farmers' Market)


  1. 4 cups mache
  2. 1 hardboiled egg
  3. 4 Tbsp. olive oil
  4. 1 Tbsp. white wine vinegar
  5. salt
  6. pepper


  1. Wash mache and dry gently with a towel or allow to air dry. Place in a salad bowl when dry.
  2. Drizzle olive oil and vinegar over greens. Toss salad gently to mix.
  3. Crumble hard boiled egg over greens, add salt and pepper to taste and serve.
