Okra and Corn Dish

Introduction

A true Southern Dish

Ingredients

  1. 2 Tbsp. butter
  2. 1 small onion -- finely chopped
  3. 1 small green pepper -- finely chopped
  4. 1 lb. okra -- cut in 1" slices
  5. 2 large tomatoes -- chopped
  6. 1 cup corn kernels
  7. ½ tsp. oregano -- crumbled
  8. Salt and pepper -- to taste

Steps

  1. Melt the butter in a pan;
  2. Add the onion and green bell pepper, and cook over medium heat for 3 to 4 minutes, stirring often.
  3. Add the okra slices and cook, stirring often, for 2 minutes.
  4. Add the tomatoes, corn, and oregano.
  5. Cover and simmer over low heat for 10 minutes. Season with salt and pepper to taste. Serve hot.
