Spice Quick Bread
(recipe, Maggie Restivo)
Introduction
This quick bread is super easy to make and delicious! It's great warmed up with a little butter at breakfast. I like a stronger spice flavor, so I am generous when I measure out my spices.
Ingredients
- ¼ cup butter, softened
- ¾ cup sugar
- 2 eggs
- ½ tsp. vanilla extract
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- 2 tsp. baking powder
- ½ tsp. ground cinnamon
- ½ tsp. ground nutmeg
- ¼ tsp. ground allspice
- ¼ tsp. salt
- ⅓ cup milk
- ½ cup chopped walnuts
Steps
- Preheat the oven to 350*.Prepare an 8x4 inch loaf pan by greasing and flouring; set aside. In a large mixing bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flours, baking powder, spices and salt. Add to the creamed mixture alternately with the milk. Fold in the walnuts.
- Transfer to prepared loaf pan. Bake at for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for about 10 minutes before removing from pan to a wire rack.
