Jeffrey’s Colorful Kale and Cabbage Salad

Ingredients
Salad
- Kale, shredded finely with a good knife
- Red cabbage, shredded
- Carrots, shredded
- Red or yellow pepper, chopped
Dressing
- ½ cup olive oil
- 2 Tbsp. roasted tahini
- 2 to 3 cloves garlic
- Lemon juice
- Salt and pepper to taste
Steps
- Mix all the salad ingredients in a bowl and toss with the dressing. Let sit for a couple of hours before serving.
