Jeffrey’s Colorful Kale and Cabbage Salad

    1. Kale, shredded finely with a good knife
    2. Red cabbage, shredded
    3. Carrots, shredded
    4. Red or yellow pepper, chopped
    1. ½ cup olive oil
    2. 2 Tbsp. roasted tahini
    3. 2 to 3 cloves garlic
    4. Lemon juice
    5. Salt and pepper to taste


    1. Mix all the salad ingredients in a bowl and toss with the dressing. Let sit for a couple of hours before serving.
