Ingredients

  1. 1 Date Filling:
  2. 1¼ cups dates, halved
  3. ¼ cup sugar
  4. ½ cup water
  5. 1 Tbsp. lemon juice
  6. 1 Cookie Base:
  7. ¾ cup butter
  8. 1½ cups flour
  9. 1 cup brown sugar
  10. 1 cup quick oats
  11. ½ tsp. salt

Steps

  1. Mix filling ingredients in pan. Cook over medium heat, stirring occasionally, until thick and smooth.
  2. Cream butter, brown sugar and salt. Blend in flour and oats until particles are fine.
  3. Press ⅔ of crumb mixture into bottom of greased 9x13 pan. Spread with filling. Sprinkle with remaining crumbs. Press lightly.
  4. Bake at 350, 30-35 minutes or until golden brown. Let cool, cut into squares.
