Ingredients
- 1 Date Filling:
- 1¼ cups dates, halved
- ¼ cup sugar
- ½ cup water
- 1 Tbsp. lemon juice
- 1 Cookie Base:
- ¾ cup butter
- 1½ cups flour
- 1 cup brown sugar
- 1 cup quick oats
- ½ tsp. salt
Steps
- Mix filling ingredients in pan. Cook over medium heat, stirring occasionally, until thick and smooth.
- Cream butter, brown sugar and salt. Blend in flour and oats until particles are fine.
- Press ⅔ of crumb mixture into bottom of greased 9x13 pan. Spread with filling. Sprinkle with remaining crumbs. Press lightly.
- Bake at 350, 30-35 minutes or until golden brown. Let cool, cut into squares.
