Michael's German Pancakes

  1. 4 Tbsp. butter
  2. 6 eggs
  3. 1 cup flour
  4. 1 cup milk
  5. 1 tsp. salt
  6. 1 Tbsp. sugar
  7. ΒΌ tsp. vanilla


  1. Preheat oven to 425.
  2. Melt butter in an 8''-10'' ovenproof skillet until it is foamy and bubbly.
  3. Mix eggs, flour, milk, salt, sugar and vanilla in a blender and pour into the skillet. Place skillet in the oven until it puffs and browns on top -- about 18 minutes. Remove from oven.
  4. Sprinkle with sugar and a few drops of lemon juice or spread with jam.
  5. For lower calorie version, use butter cooking spray instead of butter. Not quite as fluffy as the regular version, but still very, very good! (Butter spray works much better than butter for ease of removing pancake from pan) Saves about 150 calories per serving.
