Caliente Beef Jerky

Ingredients

  1. 1 lb. beef
  2. ½ tsp. cayenne
  3. 1 tsp. pepper
  4. 1 tsp. chili powder
  5. 1 tsp. garlic powder
  6. 1 tsp. onion powder
  7. 1 tsp. salt
  8. ½ tsp. liquid smoke
  9. 2 Tbsp. worcestershire
  10. 3 Tbsp. soy sauce
  11. 4 Tbsp. water

Steps

  1. Trim all fat and cut into ¼ inch slices.
  2. Combine ingredients, add meat and cover.
  3. Marinate in fridge overnight.
  4. Remove from marinade, line a cookie sheet with foil and lay meat without touching.
  5. Dry for 10-12 hours at 175 degrees making sure to turn every 3 hours and keeping oven door propped open for ventilation.
  6. After completely cooled, store in refrigerator in plastic bags.
