Low Carb Egg Muffins

Ingredients

  1. 6 eggs
  2. 1 lb. sausage, can us more if you want
  3. 1 smalll bell pepper,chopped
  4. 1 small onion,chopped
  5. 1 cup cheddar cheese, shredded

Steps

  1. Preheat oven at 350.
  2. Brown sausage and crumble.
  3. Saute pepper and onions in olive oil.
  4. Whisk the 6 eggs.
  5. Mix sausage, peppers onions and eggs.
  6. Add ½ cup cheese to the mixture.
  7. Grease muffin pan.
  8. Fill each muffin cup ¾ full.
  9. Sprinkle remaining chese on top.
  10. Bake for 15 to 20 minutes, until the muffins brown.
