Ginger-Soy Dipping Sauce

This sauce is a standard accompaniment for potstickers. Vinegar and ginger provide a vibrant counterpoint to the richness of the dumplings.


  1. ¼ cup soy sauce
  2. 3 Tbsp. white vinegar or apple-cider vinegar
  3. 1 Tbsp. chopped fresh ginger
  4. 2 tsp. sugar
  5. 2 tsp. sesame oil
  6. ½ tsp. salt


  1. Combine the soy sauce, vinegar, ginger, sugar, sesame oil, and salt in a medium bowl. Whisk or stir well to dissolve the sugar and salt, then mix everything together into a thin, smooth sauce.
