For years I thought the only thing to do with leftover polenta was to fry it. Admittedly, not a bad idea. But a little while back, my mom mentioned--quite casually, as if I was supposed to know this!--that if you whisk hot liquid into the polenta it turns back into its glorious self. It was a small jump to realize I had the makings of a delicious soup here. Now I generally make extra--the next day, I heat a bunch of stock, whisk in the leftover polenta (making it a thinner consistency than the first time around), and add some vegetables. For tonight's soup I added some cooked Borlotti beans and kale--serve with a little parmesan and a slick of green olive oil...delicious.
