Matcha Pecan Banana Pancakes with ham scramble

I like matcha green tea, pecans, bananas and pancakes so we decided to throw them all together and see if they made a good pancake. They do.


  1. 1 tsp. matcha
  2. 1 banana, diced
  3. ΒΌ cup pecans, chopped
  4. maple syrup
  5. butter
  6. enough pancake mixture for the smallest serving size on the Snoqualmie Falls Pancake mix (6 pancakes)
  7. Ham scramble ingredients:
  8. 3 slices of deli ham (niman ranch), diced
  9. 1 shallot, minced
  10. 6 eggs
  11. 1 Tbsp. milk
  12. 1 clove garlic, minced
  13. salt and pepper
  14. cheese (parmesan, smoked fontina or any other favorite)
  15. sprinkle of dried parsley


  1. mix up pancake mix using Snoqualmie Falls Pancake instructions
  2. dissolve matcha with a small amount of hot water
  3. add matcha mixture to pancake mix and stir to combine
  4. gently fold in diced bananas and chopped pecans
  5. cook like normal pancakes
  6. add a few diced bananas and pecans for garnish
  7. serve with butter and maple syrup
  9. scramble eggs with a little milk
  10. saute some minced garlic, minced shallots and ham pieces with tea seed oil
  11. season with s & p
  12. add egg mixture to pan and cook
  13. top with grated cheese and dried parsley
