Matcha Pecan Banana Pancakes with ham scramble

Introduction
I like matcha green tea, pecans, bananas and pancakes so we decided to throw them all together and see if they made a good pancake. They do.
Ingredients
- 1 tsp. matcha
- 1 banana, diced
- ΒΌ cup pecans, chopped
- maple syrup
- butter
- enough pancake mixture for the smallest serving size on the Snoqualmie Falls Pancake mix (6 pancakes)
- Ham scramble ingredients:
- 3 slices of deli ham (niman ranch), diced
- 1 shallot, minced
- 6 eggs
- 1 Tbsp. milk
- 1 clove garlic, minced
- salt and pepper
- cheese (parmesan, smoked fontina or any other favorite)
- sprinkle of dried parsley
Steps
- mix up pancake mix using Snoqualmie Falls Pancake instructions
- dissolve matcha with a small amount of hot water
- add matcha mixture to pancake mix and stir to combine
- gently fold in diced bananas and chopped pecans
- cook like normal pancakes
- add a few diced bananas and pecans for garnish
- serve with butter and maple syrup
- ADDITIONAL HAM SCRAMBLE DIRECTIONS:
- scramble eggs with a little milk
- saute some minced garlic, minced shallots and ham pieces with tea seed oil
- season with s & p
- add egg mixture to pan and cook
- top with grated cheese and dried parsley
