Roasted Sweet Potatoes

No peeling is necessary for these easy vegetable slices.


  1. 4 medium-to-large sweet potatoes
  2. 2 Tbsp. extra-virgin olive oil
  3. Salt and pepper, to taste


  1. Preheat the oven to 400 degrees.
  2. Wash the sweet potatoes, pat them dry, and cut them into chunks. Place the potatoes in a large bowl and toss them with the olive oil, salt, and pepper.
  3. Place on a baking sheet or in a roasting pan and roast for 30 to 35 minutes.
