Roasted Sweet Potatoes

Introduction
No peeling is necessary for these easy vegetable slices.
Ingredients
- 4 medium-to-large sweet potatoes
- 2 Tbsp. extra-virgin olive oil
- Salt and pepper, to taste
Steps
- Preheat the oven to 400 degrees.
- Wash the sweet potatoes, pat them dry, and cut them into chunks. Place the potatoes in a large bowl and toss them with the olive oil, salt, and pepper.
- Place on a baking sheet or in a roasting pan and roast for 30 to 35 minutes.
