Marshmallows

I have a strange weakness for marshmallows — their light-yet-chewy texture, their ephemeral flavor of vanilla. (When I had to suffer through gooey fluoride treatments at the dentist as a kid, I always chose the marshmallow flavor.) They're perfectly tasty on s'mores, although I prefer to eat them freshly caramelized off the roasting stick.

Homemade mallows are easy (albeit messy) to make, and are far less chemical-tasting than the commercial kind. 

Folks who had no idea you could make an industrial extruded product at home will be charmed by fluffy cubes of the homemade version. Best of all, however, is the homemade mallow's superior meltingness in a mug of hot cocoa.
