tempura batter

This recipe is based on Mark Bittman's in How to Cook Everything, 1998. This will make enough batter for more tempura than two people can eat.


  1. 1 egg yolk
  2. 1½ cups of icewater
  3. 1 cup of flour plus some more, reserved


  1. When you are ready to fry whatever you are frying, beat the egg with the icewater.
  2. Add 1 cup of flour to the icewater-eggyolk and make a chunky batter. Don't overmix.
  3. Roll your whatever in the reserved flour, coat with batter, and fry.
