This recipe is based on Mark Bittman's in How to Cook Everything, 1998. This will make enough batter for more tempura than two people can eat.
- 1 egg yolk
- 1½ cups of icewater
- 1 cup of flour plus some more, reserved
- When you are ready to fry whatever you are frying, beat the egg with the icewater.
- Add 1 cup of flour to the icewater-eggyolk and make a chunky batter. Don't overmix.
- Roll your whatever in the reserved flour, coat with batter, and fry.
