Introduction

Refreshing refrigerated Augusta Favorite

Ingredients

  1. 1 cup chopped Cucumber
  2. 1 cup chopped Tomato
  3. ¼ cup chopped Celery
  4. ¼ cup Green Bell Pepper
  5. 1 cup rice
  6. 1 can Mexican Corn "drained"
  7. ¼ tsp. of Salt
  8. ¼ tsp. of Dill Weed
  9. ¼ tsp. of Black Pepper
  10. ¼ tsp. of Mustard
  11. 1 tsp. of Olive Oil
  12. ½ cup Vinegar
  13. 1 Tbsp. of chopped Parsley
  14. Curly Lettuce leaves
  15. Parmesan Cheese " grated fine"

Steps

  1. Mix the first 6 ingreadiants together in a large bowl. Combine salt, dill weed, black pepper, mustard, olive oil, and vinager. Pour over rice mixture. Chill for 4 hours or over night. Place lettuce leaves on a plate. Top with salad. Garnish with parsley and parmesan cheese. Makes 6 servings.
