Great greens

It’s midsummer, and lettuce in gardens nationwide is bolting. You might take this as a sign that it’s time to give salads a break and concentrate on all the other amazing summer vegetables. You might, that is, until you see this slideshow of salads on Gourmet.com. A few are takes on old standbys, like the grilled Caesar salad, but most are quite original. Pan-fried cauliflower and parsley? A Greek salad that doesn’t include tomatoes, olives, or feta? I’m printing them all right now.
