Chilled Soba Salad

Ingredients

  1. 1 lb. soba noodles
  2. ½ cup carrots, grated
  3. ¾ cup green onions, finely chopped
  4. 2 cups bean sprouts
  5. 4 cloves garlic, minced
  6. 1 Tbsp. ginger, minced
  7. ½ cup soy sauce
  8. 3 Tbsp. sesame oil
  9. 3 Tbsp. rice-wine vinegar
  10. 2 Tbsp. honey
  11. 1 tsp. chile sauce

Steps

  1. Boil soba noodles for 1 to 2 minutes until moist and pliable. Rinse in cool water and drain well. Sauté carrots in sesame oil for 2 minutes, add green onions, and cook for 1 minute more. Transfer to a large bowl and add all ingredients except noodles. Mix well, then add noodles and mix well again. Chill for about 2 hours and serve.
