Every week is different.

(post, Springfield Farmers' Market at the X)

One of the glorious things about a farmers' market is that every week is different. Growers often try new vegetables or fruit varieties, so you can try things you've never had before. Last week our newest vendor, Nou Yang, who is Hmong from Laos had amaranthus and pea tendrils neither of which I'd tried before. Amaranthus is also called Chinese spinach, so it can be prepared as you would spinach. Pea tendrils are very trendy. They're from the snow pea plant, and have a mild pea/spinach flavor. Nice in soup or stir-fried. As one of our vendors said, her newest favorite vegetable is pea tendrils.

Cucumbers and summer squash are now at the market, and corn is coming soon. Summer food is the best!
