Mexican Lime Cumin Slaw

Ingredients

  1. For the slaw:
  2. 4 cups finely shredded green cabbage
  3. 1½ cups grated carrots
  4. 1 red bell pepper, seeded and diced
  5. ¾ cup chopped scallions
  6. 1 jalapeno pepper, seeded and minced
  7. For the dressing:
  8. 2 Tbsp. vegetable oil
  9. 2 tsp. finely grated lime peel
  10. 3 Tbsp. fresh lime juice
  11. 2 Tbsp. cider vinegar
  12. 1 Tbsp. sugar
  13. 1 tsp. ground cumin
  14. 1 tsp. salt
  15. A pinch of cayenne pepper

Steps

  1. Place all of the vegetables in a serving bowl.
  2. In a small bowl, whisk together all of the dressing ingredients.
  3. Pour the dressing on the vegetables and toss thoroughly.
